Sharing some goodness...

Just wanted to take sometime and share some good eating! Kyle and I have stumbled on "Cooking Light" magazine. We have subscription and we LOVE it! It has "normal" recipes that we would actually cook. So far we've made at least 20 things from 3 magazines. Well worth the 9.99$ we paid for the year.
One in particular I would like to share is:
BBQ Chicken Sliders
Barbecue Chicken Sliders with Pickled Onions
What you need:
2 tablespoons sherry vinegar, divided (We actually used Balsamic vinegar)
1  tablespoons honey, divided
2 tablespoons water
3 tablespoons Dijon mustard
3/4 teaspoon freshly ground black pepper, divided
1 tablespoon butter
1 1/2 pounds skinless, boneless chicken thighs, trimmed
1/8 teaspoon salt
Cooking Spray
8 (1.5 oz) pull apart dinner rolls (We used Hawaiian Sweet Rolls)

1. Preheat grill to medium-high heat.
2. Combine 2 tablespoons vinegar, 1 tablespoon honey, 2 tablespoons water, mustard, and 1/4 teaspoon pepper in a small saucepan over medium-low heat. Bring to a simmer (NO BOILING). Simmer 5 minutes, stir in butter. Remove from heat but keep warm.
3.Sprinkle chicken with remaining 1/2 teaspoon pepper and salt. Place on a grill rack coated with cooking spray (We actually used the grill)
4.Shred chicken into bite-sized pieces. Add chicken to sauce pan with mustard sauce and toss to coat.
5. Cut rolls in half crosswise. Spoon chicken mixture onto rolls and top with the other half of roll.

Serves 4 (2 Sliders each)

We paired these sandwiches with grilled corn and a salad. [Healthy things!] Best part, these only have 429 cals...between the corn and salad with homemade balsamic vinaigrette dresses, not too bad of a dinner. Especially when my husband HATES healthy food.
Super easy and AMAZING! May be at my next party. :)
